  2. Pumpkin Ice Cream Pie

  4. Ingredients: 
  5. 1 cup mashed pumpkin, canned or cooked 
  6. 1/2 cup firmly packed brown sugar 
  7. 1/4 tsp ground nutmeg 
  8. 1/2 tsp ground cinnamon 
  9. 1 qt vanilla ice cream, softened 
  10. 1 graham cracker crust (see below) 
  11. whipped cream 
  12. chopped pecans (optional)

  15. Combine pumpkin, sugar, nutmeg, and cinnamon in a large mixing bowl. Stir until sugar dissolves. Add ice cream and mix well. Spoon into graham cracker crust. Freeze 8 hours. Let stand at room temperature 5 minutes before serving; serve garnished with whipped cream and nuts.

  17. Pie can be made well in advance and kept frozen until ready to serve.

  21. Graham Cracker Crust

  23. Ingredients: 
  24. 1-1/4 cups graham cracker crumbs 
  25. 3 Tbsp sugar 
  26. 1/3 cup butter/oleo, melted 
  27.  
  28. Combine crumbs and sugar. Stir in butter and mix well. Press mixture firmly into a 9" pie plate. Bake at 350░F for 8 minutes. Cool before filling.
